PROVINCIAL COOKING AT MISTRAL, HONG KONG

Chef GianLuigi Bonelli, the talented Chef at Mistral, Grand Stanford Inter-Continental Hong Kong's highly rated Italian restaurant will present 2 special promotions featuring a variety of some of the most famous winter dishes from Northern Italy – the region famed for it’s delicious rustic fare.

From 4 – 14 January 2001, Chef Bonelli presents a variety of Duck Liver dishes from his home region of Trentino. Dishes include Marinated duck liver with crispy bread, bacon and potato salad, Potato ravioli stuffed with duck liver, sauteed green apple and butter sauce, Pan-fried duck liver with salmon fillet in savoy cabbage, porcini mushrooms and shallot sauce and Grilled Duck Liver in a corn pancake, topped with a sweet wine reduction.

From 15 – 31 January 2001, Chef Bonelli will introduce the true triumph of Italian cuisine, Bollito Misto - a renowned favourite with Italian families in the Piemonte region, northwest Italy. Meats used to prepare a traditional Bollito Misto (casserole) are chicken, beef, veal, pig’s trotters and fresh sausage. Delicious dishes include: Beef tongue with onion potatoes, sautéed bell pepper and horse radish sauce; Pig’s trotters with balsamic potatoes, cabbage and cucumber sauce; Beef brisket with pepper potatoes, glazed carrots and shallot sauce; Chicken with paprika potatoes, sweet & sour onion and green sauce; Bone ham with garlic potatoes, red chicory and pepper sauce. All dishes are guaranteed to satisfy any hearty appetite.
