 The interview was conducted late Saturday afternoon on 7 December 2013.

 Chef Mario has been at the Four Seasons Resort Chiang Mai for just one month, and will be hosting his first official wine dinner this coming weekend. It is his first chance to officially displays his talents to a select group of Chiang Mai residents.

Chef Mario has previously worked with 5-star hotels in Muscat, as well as in China and other countries around the world.

 In this interview we discuss his plans for the Four Seasons Resort Chiang Mai, what he has learned from his experiences in other hotels and countries, what Italian food in Palermo - Mario's home town - is all about, and what you can expect from the Chef's Table at the Four Seasons Resort Chiang Mai, what his signature dishes are and what he has planned for the upcoming wine dinner.
