Australian chef Brett joined Cafe Sydney and Quay Bar prior to their opening in
June 1999. At the Quay Bar his passion for the sea is reflected in a menu which
blends the freshest seafood with a range of modern Australian and European
dishes, in addition Brett and his team offer an oyster bar stacked with different
varieties of Australian oysters, freshly shucked to order. Brett's broad experience
comes from more than 10 years with some of Sydney's leading bistros and hotel
brasseries.

During Brett's visit to Hong Kong, this talented young chef will also spend time at
the restaurant group's two EAT restaurant diners at Pacific Place and Cityplaza, to introduce a
range of new dishes inspired by his Australian heritage and love of seafood.

Cafe Sydney and Quay Bar is the first Australian venture for Hong Kong-based Cafe Deco
group of restaurants, which owns and operates Cafe Deco and Peak Cafe at The Peak as
well as the EAT restaurant diners in Pacific Place and Cityplaza. Cafe Sydney and the Quay
Bar occupy prime locations in one of the Olympic city's key historic buildings, The Customs
House at Circular Quay. Cafe Sydney which extends over the entire top floor of the
Customs House with magnificent views of Sydney Harbour Bridge, features many of the
successful culinary concepts of Cafe Deco, while the more informal Quay Bar is at street
level with a typical city bar and outdoor dining terraces which extend out on the main
Customs House forecourt. Here distinctive white umbrellas provide shade from the Sydney
sunshine and attract busy city workers and tourist alike to this scenic location.
