The Castle Hotel, a Luxury Collection Hotel in Dalian, China has appointed Paul Liu as Executive Chef of its Zhenbao Chinese Restaurant.

A seasoned hospitality professional, Liu most recently worked as the executive chef at the Ju Hao Xuan and Qing Hui Lou restaurants at the Grand Square Hotel Wuhu.

During his 22 year career, he has worked alongside a number of high level Hong Kong chefs learning to master kitchen management and Cantonese cooking skills, including culinary specialties such as bird's nest and abalone.

Liu worked his way through the ranks, beginning with a job as a kitchener at the Guangzhou Hualigong Hotel. He has also served as Chinese Executive Chef at a number of other respected hotels including the Pan Pacific Hotel and Serviced Suites Ning BO, QianDao Lake Resort Sheraton and Renaissance Hotel Tian Jin.

“We’re pleased to welcome Paul to The Castle Hotel to oversee our fine dining program at Zhenbao,” said Claudia Liao, hotel manager of The Castle Hotel, Dalian. “We are proud to provide guests with an authentic and decadent culinary menu, and we’re confident that Paul’s successful track record will bring Zhenbao to reach new heights.”

Liu’s extensive experience managing large scale dining will serve him well, as the restaurant seats 296 and features 15 private dining rooms named after famous castles from around the world.
