Cyrille Mollé Joins Raffles Beijing as Executive Chef

Raffles Beijing has appointed Cyrille Mollé as the new Executive Chef of all on-site dining operations.

Born in France, Executive Chef Cyrille Mollé, who has more than 18 years of in the kitchen, graduated from the esteemed “Les Sorbets” Catering School in Noirmoutier in the Pays Loire region in western France.

After three years in the kitchens of Switzerland and Saint-Barthélemy FWI, he honed his cooking skills while inserting a signature French twist on cosmopolitan cuisine in Asia for 15 years.

Following spells with Ashanti Dome and Shikumen Bistro in Shanghai, he moved on to become Executive Chef of all four of LOFT 98’s outlets. It was his success with LOFT 98 that caught the eye of the France Pavilion at the 2010 Shanghai World Expo where Chef Cyrille was appointed Executive Chef of the Pavilion’s 6SENS Restaurant by J&L Pourcel. An appointment in the World Expo gave Executive Chef Cyrille the opportunity to create his signature dishes for nearly 150,000 people over the short six months of the exhibition.

Prior to joining Raffles Beijing, Chef Cyrille raised the bar of French dining in Beijing and has won several awards of which his biggest achievement yet, Best Chef 2014.

Executive Chef Cyrille said,  “I am excited to take on this new position at Raffles Beijing. The position provides a theater for me and my team to create Modern French Bistro dishes while providing a one-of-a-kind dining experience for guests.”
