Shangri-La Hotel Tokyo Appoints New Executive Chef

Stephane Puverel has been appointed executive chef of Shangri-La Hotel, Tokyo.

Chef Puverel has over 20 years’ experience at a vast range of international destinations, from South Africa to Monaco and China. He joins Shangri-La Hotels and Resorts from his previous position as executive chef at The Ritz-Carlton, Dubai.

Chef Puverel nurtured his interest in food at his grandmother’s kitchen in France. By absorbing techniques and refining his style at leading kitchens in Geneva, London, New Orleans and more, he has cultivated a style of minimalism and simplicity, focusing on visually enticing dishes that use local produce and seasoning.

Chef Puverel said, “Japan’s unique history, tradition and culture has a mystique attached and an authenticity. We will start by taking advantage of the amazing quality of local products and then influence them with global flavors to push the envelope. Working at the Shangri-La Hotel, Tokyo is about achieving a standard of excellence and leaving a footprint.”
