Island Shangri-La, Hong Kong’s Michelin one-star Restaurant Petrus will, for one night only, host a wine dinner to pair six of the most exquisite Bordeaux Saint Julien wines on 23 April 2009.

Mr. Didier Cuvelier, the co-owner of Chateau Leoville Poyferre in Saint Julien, Bordeaux, will be present on the night to showcase some of the most exquisite wines from the chateau.

The six-course dinner, prepared by Chef Frederic Chabbert, complements six Saint Julien vintages and is priced at HK$1,980 plus 10% service charge per person.

The dinner starts with champagne, and the pairing of David Herve Flat Oyster with Seaweed Butter Sauce. The second course of Soft Boiled Organic Egg, Wild Mushroom and Black Truffle Beef Jus is matched with Chateau Levoille Poyferre 2003 and 2000.

Chef Chabbert’s gastronomic flair continues to the third and fourth courses with Green Asparagus Veil with Gratinated Candele Pasta and Chateau Levoille Poyferre 1998, and Roast Milk-fed Aveyron Lamb Rack with Chateau Levoille Poyferre 1995 and Chateau Levoille Poyferre 1990 en Magnum respectively.

Cheeses from Bernard Antony – Ossau Iraty and aged Comte – will accompany Chateau Levoille Poyferre 1983. For dessert, guests will have Guanaja Chocolate Palet with Caramel Shard.

The wines of Saint Julien of Chateau Leoville Poyferre have always been considered as among the best from the Bordeaux region.

In addition, Restaurant Petrus has introduced a flambé menu, with the spectacle of live cooking presentation.

The menu includes main course selections such as Challans Squab with Giblet Sauce Black Truffle and Wagyu Beef Tenderloin with Sarawak Pepper Swiss Chard, as well as dessert options like Crepes Suzette. The flambé menu is seasonal and changes according to the availability of the finest produce carefully selected by Chef Chabbert.
